Turkey Albania Armenia Bulgaria Georgia Greece Israel Serbia burek are common in all the area under ottoman influence, they can be filled with spinach or potatoes or cheese (or ground meat). Known as borekass in Israel, giben ica in Serbia or banitsa in Bulgaria... Here we have a recipe of cheese börek

Ingredients :
turkish cheese or feta 150g
grated cheese 100g
filo pastry : 6 leaves
chopped flat-leaf parsley
milk 350 ml + pepper
olive oil 2 tbsp

Recipe of easy burek :
Heat the oven at 210°C
Wash and chopp the parsley and mix it with the grated cheese and the crumbled feta
Brush the bottom of a big gratin dish with vegetable oil.
Lay on the bottom of the dish 3 filo (or youfka) sheets, letting overflow the edges (we could fold them on the top once the borek is finished. No matter if the leaves tear up, you can add the torn parts as well.
Baste generously with the peppered milk
Spread half of the cheese + parsley mix on the leaves.
Deposit 3 other sheets of filo on the top, folding or wrinkling sheets that or too big
Baste again with peppered milk and spread the rest of the cheese mix.
Brush with olive oil and spread with sesame seeds (optional)
Let it cook in the oven for 25 min at 210°C.
